Date & Apple Cake with Caramel Cream Cheese Frosting

Date & Apple Cake

125g pitted dates
125g dried apple
1tsp bicarbonate of soda
1½ cups boiling water
125g butter
125g soft brown sugar
2 eggs
250g self-raising flour
1tsp mixed spice
1tsp ground cinnamon

Apple Date Cake

  1. Grease and line two 20cm cake tins. Preheat oven to 180°C.
  2. Roughly chop the dates and dried apple and place into a large bowl with the boiling water. Allow to soak for 15-20 minutes while you prepare the rest of the ingredients.
  3. Beat the butter and brown sugar until pale and fluffy.
  4. Add the eggs, one at a time, mixing well in between.
  5. Add the sifted flour and spices, followed by the apple and date mixture (including any liquid).
  6. Stir until just combined and divide the mixture equally between the two tins.
  7. Bake for 20-25 minutes, until a skewer inserted into the centre comes out clean.
  8. Allow to cool in the tin for around 15 minutes before turning out.
