Apple Slice


125g butter, melted
125g desiccated coconut
125g caster sugar
200g self-raising flour
2 tsp vanilla essence
1 tin apples (400g)
200g sour cream
1 tsp cinnamon
1 tsp caster sugar

  1. Preheat oven to 180°C and line a 20cm square cake tin with baking paper - leave a little overhang to help lift the slice from the tin once baked.
  2. Pour the melted butter into a large bowl and add the coconut, sugar, flour and vanilla.
  3. Beat the mixture until thoroughly combined, then press the mixture evenly into the prepared tin.
  4. Bake for 15 minutes, until lightly browned.
  5. Remove the slice base from the oven and cover it evenly with the apple, then spread the sour cream all over the top.
  6. Combine the sugar and cinnamon and sprinkle it all over the sour cream.
  7. Return to the oven and bake for another 20 minutes, until the sour cream has set.
  8. Refrigerate until completely cold before slicing into squares - the base tends to crumble if handled while hot.

Cheat's tip

For the base, mix the melted butter and coconut with a packet of Golden Buttercake Mix, press into the tin and continue as per the recipe.
