Broccolli & Blue Cheese Soup
Ingredients
1 | large onion, finely chopped |

1 tbs | olive oil |
1 | medium potato, diced |
800ml | vegetable stock |
1 head | broccolli, chopped (chop stalks finely) |
40g | blue cheese, crumbled |

- In a large saucepan, fry the onion in the olive oil until soft.
- Add the potato and stock and simmer (lid on) for 5 minutes.
- Add the broccolli and simmer for a further 10 minutes, until the vegetables are soft.
- Blend until smooth. Add the blue cheese and stir until melted. Top with extra blue cheese and season to taste.
