Date & Apple Cake with Caramel Cream Cheese Frosting

Date & Apple Cake
125g | pitted dates |
---|---|
125g | dried apple |
1tsp | bicarbonate of soda |
1½ cups | boiling water |
125g | butter |
125g | soft brown sugar |
2 | eggs |
250g | self-raising flour |
1tsp | mixed spice |
1tsp | ground cinnamon |

- Grease and line two 20cm cake tins. Preheat oven to 180°C.
- Roughly chop the dates and dried apple and place into a large bowl with the boiling water. Allow to soak for 15-20 minutes while you prepare the rest of the ingredients.
- Beat the butter and brown sugar until pale and fluffy.
- Add the eggs, one at a time, mixing well in between.
- Add the sifted flour and spices, followed by the apple and date mixture (including any liquid).
- Stir until just combined and divide the mixture equally between the two tins.
- Bake for 20-25 minutes, until a skewer inserted into the centre comes out clean.
- Allow to cool in the tin for around 15 minutes before turning out.
