How to cook the perfect steak on your BBQ!

How to cook the perfect steak on your BBQ

For a perfectly succulent steak

Limit the number of steaks cooking on the barbecue at any one time. Overcrowding reduces the heat, which can prevent the steaks from cooking evenly and cause them to release juices, making the meat tough.

Use tongs for turning your steak. Sharp forks can pierce the surface, allowing juices to escape.

  • Bring your steak to room temperature before cooking.
  • Preheat a barbecue grill or plate on medium-high. Brush both sides of the steak with olive oil to prevent it from sticking.
  • Wait until just before cooking to season your steak. Season one side with salt and pepper, then cook the steak, seasoned side down first, to seal in the flavour. Season the other side just before turning over.
  • After cooking, transfer the steak to a plate and allow to rest for 5 minutes to retain the juices.

Use the following times as a guideline for a 2cm steak. Steaks should only be turned once when cooking.

  • Rare: Cook each side 2 minutes – it should be very soft to touch
  • Medium rare: Cook each side 3 minutes - it should be soft and springy
  • Medium: Cook 4 minutes each side – it should be firm and springy
  • Well done: Cook 2-4 minutes each side, then reduce heat and cook a further 4-6 minutes. The steak will be very firm to touch.

Need more help?

If you’re still not super confident about cooking times, use a meat thermometer. Push the probe into the centre of the meat (close to the bone if it has one).

The temperature should read:

  • Rare: 40-45 degrees
  • Medium Rare: 50-55 degrees
  • Medium: 60-65 degrees
  • Well Done: 70 degrees-plus
