White Chocolate Rocky Road
500g white chocolate
200g marshmallows, cut in half
80g shelled pistachios
80g macadamia nuts or hazelnuts
40g chopped red gummy lollies, eg snakes
50g dessicated coconut
Line a lamington tin (or similar) with baking paper and set aside.
In a small bowl, melt the white chocolate in the microwave (checking and stirring every 20 seconds).
Place the rest of the ingredients in a large bowl and pour the melted chocolate on top. Stir until combined, then pour the mixture into the lined tin and spread evenly.
Refrigerate until set, then cut into squares.
