Broccolli & Blue Cheese Soup


1 large onion, finely chopped
1 tbs olive oil
1 medium potato, diced
800ml vegetable stock
1 head broccolli, chopped (chop stalks finely)
40g blue cheese, crumbled

Broccolli and blue cheese soup

  1. In a large saucepan, fry the onion in the olive oil until soft.
  2. Add the potato and stock and simmer (lid on) for 5 minutes.
  3. Add the broccolli and simmer for a further 10 minutes, until the vegetables are soft.
  4. Blend until smooth. Add the blue cheese and stir until melted. Top with extra blue cheese and season to taste.
