No eggs for baking? Use these substitutes instead!

If you’re baking and have run out of eggs, try one of these substitutes instead. Some of the substitutes are also a great option if you are baking for someone who follows a vegan diet.

To replace one large egg, you can use: 

  • One tablespoon of ground chia or flax seeds and three tablespoons of water whisked together until thickened.
  • Two tablespoons of arrowroot powder mixed with three tablespoons of water
  • 1/4 cup of unsweetened apple sauce
  • 1/4 cup of mashed banana  
  • Two tablespoons of water plus two teaspoons of baking powder and one teaspoon of vegetable oil 
  • 1/4 cup of carbonated water
  • 1/4 cup of silken tofu, blended until smooth
  • One teaspoon of baking soda mixed with one tablespoon of vinegar
  • 1/4 cup of plain yoghurt or buttermilk  
  • Three tablespoons of the liquid from a can of chickpeas – or from cooking chickpeas (also known as aquafaba).  
  • Aquafaba is also a great substitute for egg whites. Two tablespoons is the equivalent of one egg white, and you can use it in baking to lighten cakes and batter, or even to make meringues or marshmallows. Just whip it for around 15 minutes before using
