Ingredients

150g butter

200g golden caster sugar

1 tsp vanilla bean paste or vanilla extract

65g cocoa powder

2 eggs

50g plain flour

75g milk, dark or white chocolate chips
Method

Cut the butter into cubes and place in a square 22cm microwaveable dish (glass, ceramic or silicone work well).

Heat the butter on full power for 30-45 seconds until melted – stir the butter halfway through.

Pour the butter into a mixing bowl.

Put the microwaveable dish to one side – you’ll be using this again to bake the brownies.

Add the sugar, vanilla and cocoa to the melted butter and either hand whisk or use an electric mixer until everything is combined.

Beat the egg into the mixture, one at a time.

Gently fold in the flour and choc chips.

With a pastry brush, spread the remnants of the melted butter around the microwaveable dish, or line it with greaseproof paper to prevent sticking.

Pour the brownie mixture into the microwaveable dish and spread evenly.

Cook on full power in the microwave for 4-5 minutes.

Stand for at least 15 minutes before cutting – the brownies will firm up as they cool.

Cut into squares and enjoy!
