Ingredients
- 150g butter
- 200g golden caster sugar
- 1 tsp vanilla bean paste or vanilla extract
- 65g cocoa powder
- 2 eggs
- 50g plain flour
- 75g milk, dark or white chocolate chips
Method
- Cut the butter into cubes and place in a square 22cm microwaveable dish (glass, ceramic or silicone work well).
- Heat the butter on full power for 30-45 seconds until melted – stir the butter halfway through.
- Pour the butter into a mixing bowl.
- Put the microwaveable dish to one side – you’ll be using this again to bake the brownies.
- Add the sugar, vanilla and cocoa to the melted butter and either hand whisk or use an electric mixer until everything is combined.
- Beat the egg into the mixture, one at a time.
- Gently fold in the flour and choc chips.
- With a pastry brush, spread the remnants of the melted butter around the microwaveable dish, or line it with greaseproof paper to prevent sticking.
- Pour the brownie mixture into the microwaveable dish and spread evenly.
- Cook on full power in the microwave for 4-5 minutes.
- Stand for at least 15 minutes before cutting – the brownies will firm up as they cool.
- Cut into squares and enjoy!
