Ingredients

  • 150g butter
  • 200g golden caster sugar
  • 1 tsp vanilla bean paste or vanilla extract
  • 65g cocoa powder
  • 2 eggs
  • 50g plain flour
  • 75g milk, dark or white chocolate chips

Method

  • Cut the butter into cubes and place in a square 22cm microwaveable dish (glass, ceramic or silicone work well).
  • Heat the butter on full power for 30-45 seconds until melted – stir the butter halfway through.
  • Pour the butter into a mixing bowl.
  • Put the microwaveable dish to one side – you’ll be using this again to bake the brownies.
  • Add the sugar, vanilla and cocoa to the melted butter and either hand whisk or use an electric mixer until everything is combined.
  • Beat the egg into the mixture, one at a time.
  • Gently fold in the flour and choc chips.
  • With a pastry brush, spread the remnants of the melted butter around the microwaveable dish, or line it with greaseproof paper to prevent sticking.
  • Pour the brownie mixture into the microwaveable dish and spread evenly.
  • Cook on full power in the microwave for 4-5 minutes.
  • Stand for at least 15 minutes before cutting – the brownies will firm up as they cool.
  • Cut into squares and enjoy!
