How to store veg and save money

While we haven’t quite reached the $10 lettuce, we all know that the price of fresh vegetables is on the rise. Here are some ways you can make your veggies stay fresh for longer so you’re not throwing your hard-earned cash into the bin.

Celery

Wrap celery in kitchen paper and then in aluminium foil and store in the fridge. This will keep it from going limp and will last much longer.  

Lettuce

Tear up a whole lettuce (don’t cut or wash) and store in a glass jar with a folded piece of kitchen paper at the bottom. This will last for up to 10 days. Wash just before using.  

Potatoes and onions

Store potatoes in a cool, dry, and dark location in wire or straw baskets so the air can circulate through. Throw in a couple of silica gel sachets (they come in some of your online shopping parcels). They will help to absorb any moisture which can cause them to spoil. Treat onions the same way but store them away from the potatoes.  

Mushrooms

Store mushrooms in a paper bag in the fridge and never wash them or they will just soak up all the water. Just before you use, give them a wipe with damp kitchen paper, or brush with a pastry brush or something similar.

Wilty vegetables

Store vegetables that can wilt or go limp (such as leafy greens, carrots, and cucumbers) in the crisper drawer of the fridge. Line your crisper drawer with paper towel and it will also absorb any moisture, making your vegetables last a little longer. Just replace the paper towel regularly.

Herbs, spring onions, leeks, and asparagus

Treat these like flowers and store in a glass or jar with the stems in a few centimetres of water. For the asparagus, trim a couple of centimetres off the stalks first and loosely cover the top with a plastic bag. You can even regrow spring onions and leeks from the discarded roots.  

Freeze

Consider stocking up on veggies while they're cheap and freeze them. Blanch them for a few minutes in boiling water before you freeze.  Fabulous money saving food freezing tips

Bring veggies back to life

If your leafy vegetables or herbs are looking a bit sad, put some water and ice in a bowl and throw in the veggies for about 10 minutes – they will perk right up! How to reduce fruit and veggie waste

Vegetables should also be stored in a different part of the fridge than fruit. This will prevent them from ripening too fast. The best way to store fruit

And finally, always buy whole vegetables rather than cut and pre-prepared in a bag, as it will last so much longer (and costs much less per kilo).
