White Chocolate Rocky Road
Ingredients
- 500g white chocolate
- 200g marshmallows, cut in half
- 80g shelled pistachios
- 80g macadamia nuts or hazelnuts
- 40g chopped red gummy lollies, eg snakes
- 50g desiccated coconut
Method
- Line a lamington tin (or similar) with baking paper and set aside.
- In a small bowl, melt the white chocolate in the microwave (checking and stirring every 20 seconds).
- Place the rest of the ingredients in a large bowl and pour the melted chocolate on top. Stir until combined, then pour the mixture into the lined tin and spread evenly.
- Refrigerate until set, then cut into squares.
