Ingredients
- 1 large onion, finely chopped
- 1 tbsp olive oil
- 1 medium potato, diced
- 800ml vegetable stock
- 1 head broccoli, chopped (chop stalks finely)
- 40g blue cheese, crumbled
Method
- In a large saucepan, fry the onion in the olive oil until soft.
- Add the potato and stock and simmer (lid on) for 5 minutes.
- Add the broccoli and simmer for a further 10 minutes, until the vegetables are soft.
- Blend until smooth. Add the blue cheese and stir until melted. Top with extra blue cheese and season to taste.
