Cheesy corn waffles
Try these super easy cheesy corn waffles. They taste great hot or cold, are perfect for lunchboxes and can be frozen then reheated in the toaster for a simple weekday brekky.
Ingredients
2 large eggs
2 tbsp olive oil
½ cup milk
½ cup Greek yoghurt
200g plain flour (1½ cups)
2 tsp baking powder
1 tsp salt
3-4 spring onions finely sliced
Kernels from 1 corn cob
1½ cups grated mature cheddar cheese
Method

Whisk together the eggs, olive oil, milk and Greek yoghurt.

Gradually add the flour while whisking, then add the baking powder.

Stir in the salt, spring onions, corn kernels, and Cheddar cheese.

Cook batter in the waffle maker for around 5 minutes, or until the waffles are golden and cooked through in the middle.
