2 cans chickpeas
2 tbs olive oil
1 tsp salt
½ tsp ground cumin
½ tsp garlic powder
½ tsp brown sugar
½ tsp smoked paprika
pinch chilli powder (optional)
Place the washed chickpeas on a clean tea towel and dry them as much as you can.
Toss them in a bowl with the oil and salt.
Spread them over a baking tray in a single layer and bake at 180ºC for around 45 minutes, or until crispy and the centres are no longer chewy.
Shake the tray a couple of times during baking to agitate the chickpeas for even browning.
Combine all the other spices and toss the chickpeas in the spice mix as soon as they come out of the oven.
Best eaten the same day.
