Overnight oats
The fairy godmother of breakfasts – they do all the work while you're sleeping! Just mix rolled oats with milk or a milk alternative, a dollop of yoghurt, and your favourite toppings (think fruits, nuts, honey, or peanut butter) in a jar. Let this concoction sit in the fridge overnight, and voilà, a creamy, dreamy breakfast awaits in the morning. It’s customisable, portable, and downright delicious!
Egg 'muffins'
From fairy godmothers to the superheroes of the brekky world. Whisk eggs with a bit of milk, season, then pour into muffin tins. Add in options like spinach, cheese or cooked bacon for an extra kick. Bake until set, and you’ve got a protein-packed breakfast that’s easy to eat with your hands. Make a batch at the start of the week, and you’re set for a couple of days!
A tasty variation is to line each muffin pan section with a slice of ham before you add your egg mix.
Perfect parfaits
Layer yoghurt, granola, and fruit in a portable container the night before. In the morning, grab a spoon, and you’re good to go. The combination of creamy yoghurt, crunchy granola, and juicy fruits will get your day off to a great start.
Omelette in a mug (or jar)
Grab 2 large eggs, 1 tbsp milk, 1 tbsp grated cheese, 1 tsp chopped chives or spring onion and a pinch of salt and pepper. Beat everything together and pop into a mug or jar (sprayed with a bit of oil). Microwave for about 2 minutes with a stir in between and you're good to go!
Good old hard-boiled eggs
Boil a few eggs at the beginning of the week and keep in the fridge. Grab a couple in the morning and you've got a nutritious breakfast in its own natural containers!
Quinoa fruit salad
Mix cooked quinoa (prepared the night before when you have a bit more time) with fresh fruit and splash of lime juice for a simple, refreshing brekky.
