Time-saving, freezer-friendly lunchbox ideas

Making lunch for work or school lunches for the kids in a morning can be stressful, especially if you’re in a rush. To help save valuable time, we've got some ideas you can make ahead and freeze; then, just pull them out, defrost in the fridge overnight, and grab and go in the morning!

After making your lunches to freeze, remember to use freezer safe wraps or containers and label/date your items.

Sandwiches, rolls, wraps and bagels

Make an assortment using different fillings.

Freezable fillings include:

  • Chicken, ham, bacon & roast beef

  • Hard cheese such as cheddar and gouda freeze better than softer ones

  • Roasted veggies & pesto

Don't add salad or dressings before you freeze them - it's better to add them once your sandwich has defrosted (and don't defrost it in the microwave or it will go soggy - and no-one likes a soggy sandwich!).

Pizza scrolls

  • Grab some ready-made pizza dough (or make your own). Roll it out into a rectangle and spread with tomato sauce and cheese.

  • You can add your favourite toppings such as chicken, ham, olives, chorizo.

  • Roll up the dough into a log shape and slice into scrolls.

  • Bake until golden, allow to cool and then freeze.

You could also make cheese and vegemite scrolls if you prefer to keep it simple!

Pasta salad

Prepare a big batch of pasta and freeze with chicken or fetta cheese and veggies such as pumpkin, peas or corn (these all freeze well). Take your favourite dressing in a separate container and add once the pasta has defrosted. .

Marinated chicken

This is perfect to prepare ahead in batches to add to salads, pasta or rice for lunch.

Simply marinate in your favourite sauce such as:

  • Teriyaki

  • BBQ

  • Lemon and herb

  • Honey soy

Cook and allow to cool completely in the fridge before wrapping individually and freezing.

Muffins

Make a batch of your favourite muffins - and wrap them individually for a lunchtime snack.

You could also try our delicious rhubarb and vanilla muffins or our dairy & egg free chocolate and raspberry cupcakes.

Fruit cups

Rather than spend your morning chopping fruit, make fruit cups for the freezer. Fruits that freeze well include:

  • Mango

  • Watermelon

  • Berries

  • Pineapple

  • Grapes

Mini quiches

Whip up a batch of mini quiches with various fillings, such as spinach and feta, bacon and cheese, or mushroom and onion. Once baked, let them cool, and then freeze them in airtight containers.

Our super tasty blue cheese and onion tarts also make a delicious alternative.

Dips

Prepare some hummus, tzatziki or guacamole and freeze in portion sized containers to eat with bread, crackers or veggie sticks.
