Ingredients
- Shortcrust pastry (just thawed)
- 4 large brown onions
- Olive oil
- Salt and pepper
- 2 tsp granulated sugar
- Blue cheese – use as much or as little as you like – it depends how much you like blue cheese!
Method
Pastry
- Preheat the oven to 180 C
- Cut rounds of pastry to fit each section of a 12-hole muffin pan.
- Bake the empty pastry cases for 10 minutes.
- Remove from oven and allow to cool slightly
*Caramelised onions
- Fry onions gently for 10 mins, stirring occasionally until they start to soften.
- Sprinkle the sugar over the onions and continue to cook, stirring regularly as they become softer. Continue to cook until they are darker and caramelised, then season to taste.
- Set aside to cool.
Assemble
- Put 2 tbsp of caramelised onions into each pastry case and top with a slice of blue cheese.
- Return to the oven and bake for a further 10 minutes.
A winner every time!
*You can make the caramelised onions in advance, as they keep well in a jar in the fridge (and are also great on sandwiches!).
*You could also use a jar of caramelised onion relish if you want to save time.
