Super tasty Blue Cheese and Onion Tarts

Perfect for a picnic, lunchboxes or a delicious snack while sitting at home watching the telly!

Ingredients

  • Shortcrust pastry (just thawed)
  • 4 large brown onions
  • Olive oil
  • Salt and pepper
  • 2 tsp granulated sugar
  • Blue cheese – use as much or as little as you like – it depends how much you like blue cheese!

Method

Pastry

  1. Preheat the oven to 180 C
  1. Cut rounds of pastry to fit each section of a 12-hole muffin pan.
  1. Bake the empty pastry cases for 10 minutes.
  1. Remove from oven and allow to cool slightly

*Caramelised onions

  1. Fry onions gently for 10 mins, stirring occasionally until they start to soften.  
  1. Sprinkle the sugar over the onions and continue to cook, stirring regularly as they become softer.  Continue to cook until they are darker and caramelised, then season to taste.
  1. Set aside to cool.

Assemble

  1. Put 2 tbsp of caramelised onions into each pastry case and top with a slice of blue cheese.
  2. Return to the oven and bake for a further 10 minutes.

A winner every time!

*You can make the caramelised onions in advance, as they keep well in a jar in the fridge (and are also great on sandwiches!).

*You could also use a jar of caramelised onion relish if you want to save time.
