French Toast with Caramelised Nectarines

An impressive breakfast that’s a great way to make use of nectarines that have passed their prime.

Ingredients

For the caramelised nectarines

  • 1 tbsp butter

  • 1 tbsp lemon juice

  • 1 tbsp sugar

  • Pinch of ground cinnamon

  • 3 nectarines, cut into 8 wedges each

For the French toast
  • 4 eggs

  • 180ml milk

  • 1 tsp vanilla extract

  • 8 thick slices bread (slightly stale is better)

  • Maple syrup & Greek yoghurt to serve

Method

  1. Melt butter in large frypan and add the lemon juice, sugar and cinnamon. Arrange the nectarines in a single layer in the pan.

  2. Cook for 5 minutes then flip them over and cook for a further 5 minutes.

  3. Remove from frypan and set aside.

  4. In a large bowl, whisk the eggs, milk, and vanilla extract together until well combined.

  5. Place a few bread slices into the mixture, and allow them to soak for 20-30 seconds. Do this in batches and only soak as many slices as you can fit in your frypan at once.

  6. Heat a large frypan over medium heat and add a little butter. Lift each slice of bread from the mixture and allow the excess to drain off before placing in the frypan. 

  7. Fry until browned on oneside, then flip and brown the other side. Repeat with remaining butter and bread.

  8. Serve with the caramelised nectarines and drizzle with maple syrup and Greek yoghurt.
