Ingredients
2 egg whites
75g caster sugar
1/2 tsp vanilla extract
1/2 tsp almond extract
175g shredded coconut
Melted chocolate (optional, make sure it’s gluten-free)
Method

Heat oven to 180C (160C fan-forced) and line a baking sheet with baking paper.

Whisk the egg whites, sugar, vanilla, and almond extract together until combined.

Stir in the shredded coconut.

Using a tablespoon measure, place neat mounds of the mixture onto your prepared baking sheet.

Bake for 15-20 minutes until golden.

Drizzle with melted gluten-free chocolate (optional)
