Gluten-free Coconut Macaroons

5 ingredients and around half an hour are all you need to whip up these coconut macaroons. They are a little bit crunchy, a little bit chewy and totally delicious.

Ingredients 

2 egg whites 

75g caster sugar 

1/2 tsp vanilla extract 

1/2 tsp almond extract 

175g shredded coconut 

Melted chocolate (optional, make sure it’s gluten-free) 

Method 

  1. Heat oven to 180C (160C fan-forced) and line a baking sheet with baking paper. 

  2. Whisk the egg whites, sugar, vanilla, and almond extract together until combined.  

  3. Stir in the shredded coconut.  

  4. Using a tablespoon measure, place neat mounds of the mixture onto your prepared baking sheet.  

  5. Bake for 15-20 minutes until golden. 

  6. Drizzle with melted gluten-free chocolate (optional)
