½ cup shredded rotisserie chicken
1 stalk of celery, sliced
1 spring onion, sliced
1 baby cucumber, halved lengthways and sliced
6 walnuts, chopped
8 red grapes, quartered
2 tbsp cottage cheese
2 tbsp Greek yoghurt
Squeeze of lemon juice
Leaves from 1 sprig of thyme
Salt and pepper to taste
Combine all the ingredients in a large bowl. Serve as is or use as a filling for wraps or lettuce cups.
This is a great recipe to make the night before and take to work for a delicious lunch.
