Ingredients

220g pitted dates, chopped

100g butter

2 tbsp honey

120g rice bubbles

100g chocolate, melted, any type (optional)
Method

Line the base and sides of a 20cm x 30cm lamington tin.

Place the pitted dates, butter and honey in a large saucepan over low-medium heat.

Stir until the dates have broken down and the mixture has come to a simmer and thickened slightly.

Be careful not to overcook or the mix will set too hard.

Add the rice bubbles and stir until thoroughly coated.

Press the mixture into the lined tin.

Drizzle the melted chocolate all over the top and set the tin aside to cool a little before placing it into the fridge.

Allow the slice to set for a couple of hours before cutting into squares
