Quick and Easy Lamb Kofta Flatbreads

Cook these koftas in the pan or on a BBQ and serve on flatbread with your favourite salad greens and yoghurt sauce. Deeeeelicious!

Lamb koftas 

500g lamb mince 

1/2 onion, very finely diced 

2 cloves garlic, crushed 

1/4 cup breadcrumbs 

2 tbsp fresh mint, finely chopped 

3 tsp ground cumin 

2 tsp ground coriander 

1 tsp salt 

1/2 tsp black pepper 

Method 

  1. Place all the ingredients into a large bowl and mix well to combine – clean hands are best for this job! 

  2. Shape and press the kofta mixture onto 8 skewers (or simply roll into 16-20 meatballs if you prefer). 

  3. Cook in batches in an oiled frypan over medium heat.  

These also turn out great when cooked on a BBQ. 

Yoghurt sauce 

150g Greek yoghurt 

1 tbsp lemon juice 

1 clove garlic, crushed 

Pinch salt and black pepper 

Method

  1. Whisk the ingredients together in a small bowl and adjust seasoning to taste. 

Flatbread 

200g plain flour 

200g Greek yoghurt (full fat) 

1/2 tsp salt 

Method

  1. Place the ingredients in a large bowl and stir until just combined.  

  2. Turn out onto a floured work surface and knead for a few minutes until smooth.  

  3. Return dough to the bowl, cover, and leave it to rest for 20-30 minutes. 

  4. Divide dough into 4 balls and roll each one out on a lightly floured surface to 20cm diameter. 

  5. Heat a non-stick frypan over medium heat and cook each flatbread in the dry frypan for about 30 seconds each side, or until browned. (Obviously you can buy flatbreads if you don’t have time to make your own).
