Ingredients

375g dried red lentils, washed

1 cup diced sweet potato

1 can diced tomatoes

1 cup coconut milk

1 tbsp minced garlic

1 tbsp minced ginger

1 tbsp curry powder

2 cups vegetable stock

1 tsp salt

1 cinnamon stick

1 bay leaf
Method

Put all the ingredients into your slow cooker, mix well and cook on low for 6-7 hours or high for 3-4 hours. Stir occasionally and add a little water if necessary.

Serve with toasted naan or other flatbread.
Versatile red lentils
