Versatile red lentils

Part of the legume family, red lentils are an easy-to-prepare pantry staple. They readily soak up other flavours and add bulk to soups and stews. Lentils are a good source of dietary fibre and protein as well as folate, iron, phosphorus, magnesium, zinc and potassium.
