Ingredients
3 cups self-raising flour
1 cup thickened cream
1 cup fizzy lemonade
Handful of sultanas (optional)
Method

Preheat oven to 200c.

Place flour into a large bowl.

Make a well in the centre then add lemonade, cream and sultanas and mix with a knife until just combined.

Tip out onto floured surface and gently flatten out to 3cm thickness with floured hands.

Cut into rounds with a floured cutter and place close together on lined baking tray.

Bake for 12-15 minutes.

Serve with jam & cream.
The secret to success with scones is to handle the dough as little as possible and to place the scones close together on the baking tray so they support each other as they rise.
