Ingredients
150g Madeira cake, cubed
2-3 cups fresh or frozen mixed berries
1 tbsp icing sugar
300ml whipping cream
250g cream cheese
1/2 cup icing sugar
1 tsp vanilla extract
Method
- Place the berries and 1 tbsp icing sugar in a bowl and mash with a fork. Set aside.
- Whip cream until peaks appear and set aside.
- Beat the cream cheese, 1/2 cup icing sugar and vanilla together until smooth.
- Gently fold into the whipped cream.
- To assemble the dessert, divide the cake cubes between 6 glasses, add a tablespoon of berries and juice to each glass and top with cream cheese mixture.
- Reserve remaining berry mixture.
- Refrigerate for an hour or overnight and top with reserved berries just before serving.
