Treat yourself to a classic Madeira cake

Sometimes the simple things in life are the best and this madeira cake recipe, sent to us by Jamie P. fits the bill. It’s easy to whip up and will bake in about an hour.

Ingredients 

Cake 

125g softened butter 
½ cup sugar 
1 tsp vanilla essence 
2 eggs 
1½ cups plain flour 
3 tsp baking powder 
½ cup milk 

Icing 

1 tsp butter 
4-5 heaped tbsp icing sugar 
A little hot water 

Instructions 

  1. Place butter, sugar, vanilla essence, eggs, flour, baking powder and milk in bowl and beat on a low speed until just combined. Increase speed and beat for a further 2 minutes. 

  2. Line a cake tin with baking paper and pour in the cake mix.  

  3. Bake at 180C for 50 to 60 minutes or until the cake springs back when lightly touched. 

  4. Let the cake cool in the tin for 10 minutes and then turn out onto a cooling rack.  

  5. Combine the butter, icing sugar and add enough hot water a little at a time until the icing is smooth.  

  6. Spread over the cake once it is cool.
