How to store cheese

Whether you're a fan of sharp cheddar, creamy brie or absolutely everything cheesy, it's important to know how to store your cheese properly to keep it fresh and delicious.

Fresh unripened cheese (such as ricotta or cottage cheese)

  • For ricotta, cottage cheese, cream cheese and mascarpone, keep them in their original container in the fridge.  
  • Feta should be fully immersed in its brine solution, and if it's in a vacuum-sealed pack it needs to be re-wrapped in plastic film once opened and used within one week.  

White mould cheese (such as Brie or Camembert

  • Leave small, whole cheeses in their original wrappings or containers and store in the fridge.
  • If they have been cut from a larger cheese (such as the triangular-shaped cheeses at the supermarket) take them out of their wrapping and rewrap in greaseproof/baking paper before storing them in the fridge in a container with a loose-fitting lid.

Stretched curd cheese (such as mozzarella or bocconcini)

  • If stored in liquid, the liquid should stay clear. If it becomes cloudy during storage: remove the cheese, clean the container, replace the cheese, and add enough fresh water to cover it  
  • Store haloumi in original wrapping, covered in brine, or well wrapped in plastic.
  • Both should be stored in the fridge.

Blue cheese

Australian manufacturers produce blue cheese in a variety of styles and market them under a specific brand name (such as Blue Castello)

  • Store in its original wrapper or wrap with foil, in the fridge.

Cheddar and Cheddar-style cheese (such as club cheese, Colby, and Cheshire)

  • These types of cheese can be wrapped in plastic to stop them from drying out – or wrapped in greaseproof paper and then put into an airtight container in the fridge.

Hard cheese (such as pecorino and parmesan)

  • These cheeses can be stored for long periods due to their low moisture content, if well-wrapped in paper and kept in a plastic container in the fridge.
  • Grated cheese can be frozen in an airtight freezer bag or container for up to 12 months.

Always take your cheese out of the fridge before you need it, so it can reach room temperature. Smaller pieces of cheese will need half an hour, larger ones may need an hour or two. Enjoy!
